Gluten-free granola is so easy and versatile to make you will wonder why you ever needed store bought. Once you have the base recipe down feel free to add any enhancement that you like. Add-on choices include toasted coconut flakes, raw cacao nibs (or just dark chocolate chips -after baking), or any nut, seed or dried fruit that you like.

Instructions
  1. Heat oven to 325 degrees F
  2. Melt coconut oil if solid in microwave for 30 seconds or until liquid
  3. Add honey or maple syrup and mix
  4. Add remaining ingredients and stir until fully coated. Spread on baking sheet and shake until you achieve an even layer. Bake for 15 minutes stirring once half-way through baking to ensure an even toast is achieved.
  5. Allow to cool before transferring to an air-tight storage container. Will keep in a dry cupboard for 2-3 weeks.
