Choco-nut truffle bites

These sumptuous treats will satisfy any sweet tooth. Choc full of fiber, vitamins such as folate, E and B6 and minerals such as calcium, magnesium, potassium, manganese and copper they are nutrition powerhouses too.  Better still they can be made in minutes and stored in the refrigerator for up to a week.

Ingredients

  1. In a food processor pulse the nuts several times until finely chopped
  2. Add the dates, cocoa powder,salt and almond butter to the nuts. Pulse all ingredients until combined.
  3. Add the liquid until the mixture pulls away from the sides of the bowl.
  4. Roll the mixture into 1 inch balls gently in the palm of your hand.
  5. Store in an air-tight container in the refrigerator.
Recipe Notes

Optional: roll the finished truffles in shredded coconut.
