Chicken with leeks in mustard cream sauce

This dish is flavor and comfort rolled into one.  Easy to make it keeps well and can be re-purposed on subsequent nights served over your favorite pasta or sweet potato noodles or quinoa and rice.

Instructions
  1. Melt the coconut oil in a large skillet over medium-high heat
  2. Braise the chicken on all sides until slightly brown. Set aside. Add the onion and celery sauteing until translucent. Add garlic and cut for 30 seconds more.
  3. Add back the chicken, stock, mustard and herbs. Cook on low heat for 20 minutes. Stir in cream and serve.
